Care. Wipe with a damp cloth and dry. No soaking and no dishwasher — true of any solid wood board. A wipe of food-grade mineral oil when the colour looks dry keeps the grain fed.
Grain. Acacia runs from pale honey to deep red-brown, so the five trays in your stack will not match each other. That variation is the timber rather than a fault.

Shape. This set is five circles; the other is five organic shapes — pebbles, an oval and a long narrow board — running from 16cm to 30cm. Round suits single servings and a tidier look; the organic set suits a spread laid out across a table.

They are serving trays rather than chopping boards. A cheese knife is fine; for real prep use a proper board and keep these looking their best.
