What's in the set

Seven knives, covering the shapes a kitchen actually uses: chef's, santoku, nakiri, bread, slicing, carving and a smaller utility knife for work in the hand.

On the lengths. Where you see figures like 13 inches quoted for a chef's knife, those are overall measurements — tip to the end of the handle. Subtract a handle and the chef's blade sits in the standard eight-inch class most kitchens are built around. We would rather say that than let a number do work the blade cannot.

The steel, and the finish

Steel. 5Cr15MoV stainless, hardened to 56+ on the Rockwell scale, ground to a 15° edge on 2mm stock. That is a stainless built for daily kitchen work: it takes a keen edge, resists rust and acidic food, and re-sharpens easily at home, which matters more over ten years than a number on a hardness chart.

The pattern. The wave figure on these blades is a laser-etched finish, not forge-welded layers. We are saying so plainly because knife people check, and because a decorative finish is not what makes a knife good — the steel, the hardness and the edge angle are, and all three are published above.

Handles. Pakkawood: resin-stabilised hardwood, so it has the feel of timber without the movement that untreated wood has around water.

Care

Hand wash and dry. Not the dishwasher — detergent and heat are hard on an edge and on a handle, and knives knocking about in a basket is how tips get chipped.
